A dark, mysterious Gesha from Jamison Savage's Finca Deborah: purple grape, cocoa and thyme.

In the cup

It opens with purple grape and ripe cherry, followed by cocoa nib and fresh thyme. As it cools, red plum and pineapple emerge, adding vibrancy and tension. Bright, velvety structure, clean and lasting finish.

The story

Finca Deborah sits at almost 2000 metres in Volcán, where Jamison Savage tracks every plant and controls light, humidity and airflow. For Enigma, whole cherries ferment in sealed, oxygen-free tanks with temperature, pH and pressure constantly monitored, then dry slowly in the shade on raised beds.

Competition-grade freshness

Every Over Your Limits coffee is stored green, vacuum-sealed and frozen, the same technique used for competition coffees, and we roast it only when you order. The cold stops the green bean from ageing and protects its sugars, acidity and aromas, so every lot reaches your cup with the same profile as the day we first tasted it, even months after harvest.
